If we can only have one default for now I would vote for metal for sword but dull wood for blackjack.

The sword is OK as a loud clang, but the blackjack should be the quieter "thunk" so we don't harm the player too much (making it too easy to make loud noises.)

Okay, blackjack defaults to wood, and sword defaults to metal, as request. Unless you hit an AI, then it defaults to flesh. (I know this will be weird for robot AI, but it's probably the best we can do for now)
